How long should a title tag be?

Under about 580 pixels on desktop, which is typically 50–60 characters. Mobile allows slightly more width but less overall. Front-load the words that matter most.

What happens if my title is too long?

It gets cut with an ellipsis, so the end is lost. That is not a ranking penalty, but a truncated title reads badly and can lose clicks — especially if the cut removes your key differentiator.
